The King Sliders

A slider is a mini sandwich typically a burger and bun measuring 3 inches across. Many bar and grills offer these on the appetizer menu to help fill that gotta have a burger craving.

So here is my take on the mini slider.  I start with the name and call it the King Slider.  I go a bit bigger because it is challenging to find slider buns readily available.   Ingredients include a toasted bun, bacon, sautéed onion, cheddar cheese, ground chuck, Claussen pickle slice, and Weber Chicago Steak seasoning.  Preparation is the key because the burgers will come together fast.

Start cooking the bacon in the oven at 425 degrees until it is crisp.

While the bacon is cooking you should tackle the onions. In a small sauté pan with a couple tablespoons of butter add sliced onion. You will want to cook those onions over medium-low heat until they are soft, and semi-translucent.

Prepare the one pound of ground chuck.  Add a couple tablespoons of the Weber Chicago Steak seasoning and incorporate that into the beef.  Then separate the beef into 6 equal parts and roll into balls.

With the bacon finishing up in the oven start toasting buns. On a cookie sheet, butter the inside tops and bottoms of your King's Hawaiian sweet hamburger buns. They are a soft fluffy bun and perfect for toasting.

Now preheat a large non-stick skillet over medium high heat. Place your beef in the skillet and smash them into a thin patty.  Use the bottom of a glass or coffee mug.  The beef patties will sear and cook quickly in about 2 minutes per side.   Use a wadded up paper towel with tongs and mop up any excessive grease or moisture.  The key here is only to flip them once.   Once you flip the patty, in order, add the bacon, sautéed onions, and cheese.  Once the cheese starts to melt, the burger is ready to be placed directly on the buns.  Top with a crunchy Clauseen Pickle slice.  Add your condiments and you are all set.   The King Sliders!

Spam Egg McMuffin

Here is a very simple recipe for a delicious Spam Egg McMuffin.  For each breakfast sandwich you will need:

- 1 Lightly Toasted English Muffin

- 1 Egg Whisked Vigorously with fresh ground black pepper

- Half Slice of Swiss Cheese

- 1/4 inch slice of Spam

In a small non-stick skillet heated over medium heat with a dab of butter pour your beaten egg. The Egg will spread out and cook quickly. Flip and cook the other side before browning occurs. Then fold you egg in half and half again. Place a top the bottom English Muffin.  Add your slice of cheese.

Then place in the skillet your slice of spam. Brown on each side about a minute per side. Place on top of the cheese and then place the top of the English Muffin. There you go!

Notes- The Spam is very salty so don't add salt. Cut it thin.  Use a cheese that is not considered salty like Swiss Cheese.
