There are 2 parts to beef brisket- the point and flat. Burnt ends are trimmings from the point half of a beef brisket. If the entire brisket is cooked whole(point and flat), then the point will be removed when the flat is done. The point must be smoked longer because the meat takes longer to fully cook to tender and render out fat and collagen. This longer cooking gave rise to the name "burnt ends".
The only thing you need to know is that burnt ends are good at Smokey D’s.
